Food additives, E numbers, and what actually warrants concern

The short answer

An E number simply means an additive approved for use in Europe after safety assessment. Many are benign, and vitamin C is E300. The categories with genuine open questions are certain emulsifiers, some artificial sweeteners, and specific colours linked to hyperactivity in children, which carry a mandatory UK warning.

E numbers have a worse reputation than they deserve, and a few specific additives have a better one than they deserve. Untangling the two is more useful than avoiding everything with a number.

What an E number actually is

It means the additive has been assessed and approved for use across Europe. That is the whole meaning. It is a licence plate, not a warning label.

Vitamin C is E300. Curcumin, the active compound in turmeric, is E100. Both would appear on an ingredients list as an E number, and neither is a cause for concern.

The natural versus synthetic trap

Citric acid produced by fermentation and citric acid extracted from lemons are the same molecule. Your body cannot distinguish them, because there is nothing to distinguish.

Meanwhile plenty of naturally occurring compounds are toxic. Natural describes an origin, not a safety profile, and treating it as the latter leads people to some strange places.

Where there are genuine open questions

Certain emulsifiers

Polysorbate 80 and carboxymethylcellulose are the two most discussed. Research has raised legitimate concerns about their effect on the gut mucus layer and on microbiome composition.

Being straight about the strength of this: much of the most striking evidence comes from animal models at doses that do not map neatly onto human diets. Human data is emerging and is not reassuring, but it is not settled either. It warrants attention rather than alarm.

Some artificial sweeteners

Evidence that certain sweeteners alter gut bacteria composition is mixed but real, and varies considerably between sweeteners. This is an area where the science is genuinely unsettled and confident claims in either direction should be treated with suspicion.

The Southampton Six

This is the clearest case. Six food colours were linked in UK research to increased hyperactivity in children. Products containing them must carry a warning stating they may have an adverse effect on activity and attention in children.

They are tartrazine (E102), quinoline yellow (E104), sunset yellow (E110), carmoisine (E122), ponceau 4R (E124) and allura red (E129). Most UK manufacturers reformulated to avoid them, so they are now more common in imported confectionery.

The practical approach

Counting additives is less useful than it appears, because it treats vitamin C and polysorbate 80 as equivalent. A more useful signal is the length and character of the whole list.

The deeper point is that additives are usually a symptom rather than the disease. Food requiring a long additive list is generally ultra-processed, and that is the more useful thing to notice.
